This is my take on Panera's recipe.
Ingredients
1 small yellow onion, diced
1/4 cup grass fed/grass finished butter, plus one pat to saute onion
1/4 cup flour (I use Arnold Mill or King Arthur)
2 cups chicken broth (I use Pacific organic)
2 cups whole milk ( I use A2 milk)
1/2 tsp salt (I use pink Himalayan salt)
1/4 tsp organic pepper (for all my spices I use Frontier or Simple Truth Organic)
1/4 tsp organic garlic powder
1/4 tsp organic dry mustard
1 large carrot, peeled and grated
1 large bunch fresh broccoli, washed and cut (I sometimes use frozen broccoli in a pinch)
2 cups grated cheddar cheese (I grate my own because the stuff in the bag comes coated in flour and sometimes cornstarch, which is probably genetically modified)
Directions
Saute the onion in the pat of butter over medium heat until translucent, then add the rest of the butter to melt it. After it's melted, add the flour and stir into the butter to make a roux. Pour your chicken broth and milk in next and whisk out any clumps.
Add the vegetables and the spices. Reduced heat, cover, and simmer until the vegetables are soft. 15 minutes or so.
Take the soup off the eye and add the grated cheese, stirring until well combined.
