Southern Banana Pudding

It's fitting this should be my first post on this page, because this is the recipe I'm known for.

People have different ideas of what banana pudding is and what it should be. Today I'm going to share the banana pudding recipe my grandmother used to make. Some of my kids like theirs hot and some like it cold. It can be eaten right away or refrigerated after it cools down.



Ingredients


1/2 cup sugar

6 tablespoons of all-purpose flour

a couple of pats of butter

1 1/2 cups of milk

1 teaspoon vanilla

Box of Nilla wafers

3 or so bananas, sliced







Directions

  1. Layer Nilla wafers in bottom and sides of bowl. Yes, it matters that you use Nilla wafers brand. None of the other brands hold up as well in a pudding.

  2. Layer Bananas on top of wafers. My kids and grands like the cookies so much I add another layer.


3. Pour sugar and flour in saucepan and mix to combine. Add milk and butter.


*Remember, this is a southern recipe, so it's quite rich, but I do use the best organic sugar, flour, and A2 or raw milk that I can find.


Note: Some southern cooks use eggs in their pudding, but I'm pretty sure that adding eggs technically makes it a custard rather than a pudding.


4. Once you have the milk stirred in, turn the burner on medium heat. Using a wooden spoon, stir continually, scraping the bottom of the pan as you go.


* The purpose for the wooden spoon is because metal conducts heat ("thermal conductivity"), which means your heat will be absorbed by your spoon and it'll take longer to cook your pudding.

5. Just when you think your pudding will never thicken enough to take it off the stove, it'll be ready. Check by running your finger across the back of the spoon. If the line fades away it's not ready. If the line remains, it's ready.


6. Take it off the stove and stir in the vanilla.


7. The last thing I do is top my pudding off with more cookies because that's what my family likes the most. I smash them up and sprinkle them on.


I'll list my merigue recipe below as an alternate.







Merigue Recipe

6T sugar

3 egg whites

1/2 teaspoon vanilla


Beat with mixer on high speed until stiff peaks form.

Spread over the top of your pudding. Turn oven to BROIL and place pudding inside watching closely. Remove from oven when meringue is lightly browned. It will happen quickly, so you have to watch it closely.



Sometimes, I fill a little jar with a one serving amount to pass along to a friend. I often freeze them in single servings this way and pull them out one-at-a-time for a yummy snack.
